Contrary to popular belief, pork lard is not mainly saturated fats. It actually contains approx 50% monounsaturated fatty acids (the healthy type) vs about 40% saturated fats.
Also contrary to popular belief, saturated fats are not harmful but necessary for many body functions. The integrity of every cell wall in your body depends on saturated fats and cholesterol. Without adequate saturated fats, your cell walls weaken, making you more prone to viral attacks, cell mutations, etc.
The people of Okinawa in Japan, who are well known for their longevity and good health, cook primarily with pork lard. And one of their favorite dishes is stewed pig's trotters with plenty of lard.
With pork lard crackling, the char koay teow (Fried noddle) is more aromatic and tastes better - chop sticks licking delicious !
